Ingredients
  

  • 3 Ripe bananas Mashed
  • 2 Eggs Large
  • 1/3 cup Greek yogurt Non-fat preferred
  • 1 tablespoon Honey Or pure maple syrup
  • 1 teaspoon Vanilla extract
  • 1 cup Oat flour Or whole wheat flour
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Ground cinnamon Optional for flavor
  • 1 pinch Salt
  • 2 tablespoons Chopped walnuts Optional
  • 2 tablespoons Sugar-free chocolate chips Optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
  • In a large bowl, mash the ripe bananas until smooth.
  • Add eggs, Greek yogurt, honey, and vanilla extract. Mix well.
  • In a separate bowl, whisk together oat flour, baking soda, cinnamon, and salt.
  • Add dry ingredients to wet ingredients and mix just until combined. Do not overmix.
  • Fold in optional chopped walnuts or chocolate chips.
  • Pour batter into prepared loaf pan and smooth the top.
  • Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  • Let it rest for 10–15 minutes in the pan, then cool completely on a wire rack before slicing.

Notes

You can freeze individual slices for portion control. Serve with green tea or plain Greek yogurt. For vegan, replace eggs with flax eggs.
